Cholam (Sorghum) is a nutrient-packed grain that you can use in many ways. It's rich in B vitamins, Magnesium, Potassium, Phosphorus, Iron and zinc. It is an excellent source of fiber, antioxidants and protein. It helps lower your risk of cancer, diabetes, heart disease and some neurological diseases.

Served with - Coconut Chutney / Tomato Chutney / Dhall Chutney / Brinjal Chutney
Ingredients:
For Batter:
Sorghum (Cholam) - 1 cup
Urad Dhall (Ulundu) - 1/2 cup
Fenugreek (Vendayam) - 1/6 spoon (20 to 30 pieces)
Salt - As required
For Frying:
Oil – 1 spoon
Onion – 2
Mustard Seeds (Kaduku) – 1 Spoon
Channa dal (Kadalai Paruppu) - 1 Spoon
Curry Leaves - 15 leaves
Green Chilli – 2
Ginger (Cleaned & Cutted) - 1/2 inch
Salt - As required
Method:
First, In a pan, Add Cholam with water and wash well.
In another pan, Add Urad dhall with fenugreek and wash well.
Then Marinate Cholam and Urad dhall in water for 4 hours.
After 4 hours, Move Cholam to blender and grind well like batter.
Move Urad Dhall to blender and grind well like batter.
Mix both together with salt and keep aside.
In a pan, Add Oil, Mustard, Channa dal, Curry leaves and fry well.
Add the Onions, Green chillies, Ginger, Salt and fry until it is golden brown and cooked well.
Add the mix into Paniyaram batter and mix well.
Heat the paniyaram pan and grease with Oil.
Pour mixed batter into the pan and cook on low flame till it gets cooked on one side.
Take a spoon and flip over another side until it cooked nicely.
Flip both side and ensure it is cooked nicely.
Served with Coconut Chutney / Tomato Chutney / Dhall Chutney / Brinjal Chutney and Enjoy. :)
