Brinjal Chutney


Ingredients:
Brinjal - 2
Onion - 1
Tomato - 2
Garlic - 2
Urad dal (Ulundu Paruppu) - 1/2 spoon
Coconut - 3 Pieces
Red Chilli - 2
Turmeric Powder - 1/4 spoon
Tamrind (Puli) - 1/2 lemon size
Mustard - 1/2 spoon
Curry Leaves - 10 - 15 leaves
Oil - as required
Salt - as required

Method:
In a bowl, Add Tamrind with water and mash it well.

In a Kadai, Add Red Chilli, Urad Dhall and Garlic and fry nicely.


Now add, cutted Tomato, Onion, Brinjal and stir well.
 
Add salt and Turmeric Powder and fry well.

Add the Tamrind water into the kadai and boil until all the vegetables are well cooked.


Once cooked, Switch off the stove and keep aside to cool down.

Once cooled, Grind the contents and add the fried mustard and curry leaves.



Serve and enjoy. :)
