Dindugal Mutton Biriyani

Preparation Time - 15 Minutes
Cooking Time - 30 Minutes
Serves for - 3 - 4 Persons
Served with - Onion Raitha / Red Chilli Mutton / Mutton Gravy

Ingredients:
For Masala Powder:
Coriander Seeds - 1 Spoon
Cumin Seeds - 1/2 Spoon
Stone Flower (Kalpasi) - 1 Tbsp
Cardamom - 2 Nos
Pepper - 1/4 spoon
Bay Leaf - 1 No
Star Anise - 1 No
Cinnamon - 1/4 inch
Clove - 2 Nos
Fennel Seeds - 1/2 spoon

For Masala Paste:
Shallots - 15 Nos
Green Chili - 2 Nos
Garlic - 5 Cloves
Ginger - 1/4 inch

For Biriyani:
Biriyani Rice / Seeraka Samba Rice - 2 Cups
Mutton - 1 Kg
Water - 1 1/2 Cups
Oil - 3 Spoon
Ghee - 2 Spoon
Turmeric Powder - 1/2 spoon
Chili Powder - 1 spoon
Curd - 1/2 cup
Mint Leaves - 1 handful
Coriander Leaves  - 1 handful
Salt - As required

Method:
In a Pressure cooker, Add mutton and cook for 4-5 whistles on medium flame and keep aside.
In a pan, Add the Masala powder ingredients and fry well for 3 mins and grind well and keep aside.
Now, In a blender, Add the Masala paste ingredients and grind well and keep aside.
In a bowl, Wash and Soak the rice for 30 mins.
Now, In the pressure cooker, Add Ghee, Grinded masala paste, Grinded Masala Powder and mix well.
Now, Add curd, Salt and mix well.
Add the cooked mutton pieces, Mint leaves, Coriander leaves and mix well.
Add twice mutton cooked water to cook the 1 part of rice into the cooker and mix well.
Pressure cook for 10 mins on low flame.
Keep on Dosa pan with low heat and keep the closed cooker on top for 10 mins.
Turn off and let it set for 10 mins.
Serve and enjoy with Red Chilli Mutton Mutton Gravy. :)
