Vegetable Biriyani



Type - South Indian
Preparation Time - 10 mins
Cooking Time - 15 Mins
Serves - 3 to 4 persons
Served with - Onion Raitha

Ingredients:
Basmati Rice – 2 cups
Big Onion – 1
Tomatoes – 1
Carrot – 2
Potato – 1
Beans – 15
Cauliflower– 1/2 cup
Oil – 3 tblspn
Cinnamon (Pattai) – 1 small stick
Cloves (Krambu) – 3
Elaichi - 1
Kasa Kasa - 1/2 spoon
Brinji Leaf - 1
Garam Masala powder – 2 spoon
Chilli powder (Milagai Thool) – 2 spoon
Turmeric powder (Manjal Thool) – 1 spoon
Curd – 1/2 cup
Cashews - 10
Water – 3 cup
Salt - As Required

For Masala:
Ginger – Small Piece
Garlic – 5
Mint Leaves (Pudhina) – 1/2 cup
Coriander leaves (Kothumalli) – 1/2 cup
Green Chilli – 2

Method:
Heat Kadai, Add Chilli Powder, Kasa Kasa, Elaichi, Brinji Leaf, Pepper, Jeera, cinnamon and cloves.
Roast for 2 min and grind it nicely to powder.
Wash the Biriyani Rice in a bowl and add some water and keep aside.
Take the Masala ingredients into jar and grind nicely.
Heat the Cooker and Add the cutted onions, fry till it turns light golden.
Add the tomatoes and Add the chilli powder, salt, turmeric and garam masala powder.
Now add in the ground masala and mix well.
Add the curd, vegetables and mix well. Cook for 5 mins or so.
Add the rice and stir well.
Add the water and Mix well and close the cooker, Keep in sim for 20 to 25 mins till the rice is cooked.
Turn off and let it set for 10 mins.
Add some ghee roasted cashews on the biriyani for final touch.

Serve with Onion Raitha and Enjoy. :)
