Kovaikai / Ivy Gourd has medicinal benefits for controlling diabetes, Weight Loss, Hyper Tension etc.. I've tried some of the simple recipes. Please try out from your side and let me know the feedback.
Type - South Indian
Preparation Time - 5 mins
Cooking Time - 15 Mins
Serves - 2 persons
Ingredients:
Cumin Seeds (Jeerakam) - 1/2 spoon
Onion - 1
Kovai Kai (Ivy Gourd) - 1 cup
Red Chilli Powder - 1/4 spoon
Turmeric Powder - 1/4 spoon
Coriander Powder - 1/2 spoon
Curry Leaves - 10
Oil - as required
Salt - as required
For Coconut mix:
Coconut - 2 spoons
Fried Gram (Pottu Kadalai) - 2 spoons
Garlic - 1
Red Chilli - 2
Method:
First, Wash and Cut the Kovai Kai into slices and keep aside.
In a pan, Add oil, Cumin Seeds, Onion, Curry leaves and fry well.
Add the Cutted Kovai Kai and Stir well.
Now we need to prepare coconut mix, In a blender add the Coconut, Fried Gram, Garlic & Red Chilli and grind as shown in picture.
Add the Red Chilli powder, Coriander Powder, Turmeric Powder and Salt and fry well.
Finally, Add the coconut mixture into pan and cook for 5 more minutes.
Serve and enjoy. :)
