Sarkarai Pongal / Sweet Pongal


Type - South Indian
Preparation Time - 10 mins
Cooking Time - 30 Mins
Serves - 4 to 5 Persons

Ingredients:
Ghee - 1/2 cup
Raw Rice (Pacharisi) - 1 cup
Moong Dal (Pasi Payaru) - 1/2 cup
Jaggery (Mandai Vellam) - 2 cup  
Water - 4 cup
Boiled Milk - 1 cup
Cashew nuts - 15
Raisins - 2 spoons
Cardamom powder - 1 spoon

Method:
First, Wash the rice in water and keep aside.
Now, In a pan, Add 2 spoons of ghee, Roast cashews and raisins and keep aside.
In cooker, Add 2 spoons of ghee and roast the dal with medium heat for couple of minutes without changing color. 
Now, Add the rice and mix well.
Now, Add 4 cups of water and 1 cup of boiled milk.
Cover and cook for 4 to 5 whistles on a medium heat until soft.
Again, In the pan, Add powdered jaggey, water and melt it.
Then, Strain the jaggery syrup.
Now, Add the jaggery syrup to the cooked rice and dal and Stir well.
Finally, Add Powdered cardamom powder, Roasted nuts and Remaining ghee and mix well.
Cook for 2 more minutes and turn off the heat.
Serve and Enjoy. :)
