Pongal Kulambu


In Tamilnadu, For Pongal at village sides, Pongal Kulambu / Kootu is one of the famous recipe preparing using organic local vegetables. This is served with Pal pongal.

Preparation Time - 10 mins
Cooking Time - 30 Mins
Serves - 3 to 4 Persons
Served with - Pal Pongal / Rice

Ingredients:
For Masala:
Oil - As required
Small Onion - 10
Tomato - 1 chopped
Garlic - 4
Saunf (Sombu) - 1 spoon
Coconut - 1/4 cup

For Kulambu:
Oil - As required
Bean (Green Mochai) - 1 cup
Mustard Seeds (Kaduku) - 1 spoon
Curry leaves - 10 leaves
Onion - 1
Garlic - 4 cloves
Chilli Powder - 1 spoon
Coriander Powder - 3 spoon
Turmeric Powder -1/2 spoon
Tamarind - 1 lemon size
Broad Beans (Avarakai) - 10
Brinjal (Kathirikai) - 2
Pumpkin (Manjal Poosani) - 1/2 cup
White Pumpkin (Vellai Poosani) - 1/4 cup
Potato - 1
Water - As needed
Salt - As required

Method:
In a bowl, Add the mochai and water before a day.
Next day, In a pan, Add Saunf, Onions, Coconut, Garlic and tomatoes and stir fry for 3 to 4 mins.
Take it off the heat, Move to blender and grind to puree till smooth.
In a cooker, Add Mochai, Broad Beans, Brinjal, Pumpkin, White Pumpkin, Potato, Salt and water.
Cook for 2 to 3 whistles, then sim and cook for 15 mins and set aside.
Heat oil in the same pan, Add in Mustard, Curry leaves and sizzle it.
Now, Add Onions, Garlic, Brinjal, Boiled Vegetables, Spice powders and mix well.
Add in tamarind water, Grinded masala, Salt with water.
Bring it to boil, Sim cook for 15 mins till it gets completely cooked.
Served with - Pal Pongal  and enjoy. :)
