Kambu Sarkarai Pongal

Cooking Time - 30 Mins
Serves - 4 to 5 Persons

Ingredients:
Ghee - 1/4 cup
Raw Rice (Pacharisi) - 1/2 cup
Pearl Millet (Kambu) - 1/2 cup
Moong Dal (Pasi Payaru) - 1/4 cup
Jaggery (Mandai Vellam) - 1/2 cup
Water - 4 cup
Boiled Milk - 1 cup
Cashew nuts - 15
Raisins / Dry grapes(Thiratchai) - 2 spoons
Cardamom powder - 1 spoon

Method:
First, In a pan, Add 1 spoon of Ghee, Cashew nuts, Dry grapes and roast well, then keep aside.
In cooker, Add Rice, Moong Dal and roast for 5 mins without changing color and keep aside.
In a pan, Add Jaggery with 1 cup of water and boil for 10 mins until the jaggery gets diluted nicely.
Then, Strain the jaggery syrup and keep aside.
Now, Add Pearl millet and roast well for 5 mins.
Add The rice, Dal with pearl millet.
Add 2 spoons of ghee and roast with medium heat for couple of minutes without changing color.
Now, Add 1 cup of boiled milk and 1 cup of Jaggery syrup.
Add powdered cardamom 1 spoon.
Cover and cook for 4 to 5 whistles on a medium heat until soft.
Now, Add roasted cashews and dry grapes into it and Stir well.
Cook for 2 more minutes and turn off the heat.
Serve and Enjoy. :)
