Ridge Guard Brinjal Kothsu

Description:
In South India, Especially in Tamilnadu, This is a healthy and famous recipe called - Kathirikkai Kothsu / Brinjal Kothsu / Kathirikkai Bajji , Which is easy to make and good side dish for Idly / Dosa. Thought to share with you .Try and comment  :)

Ingredients:
Ridge Guard (Cleaned & Cutted) - 2 cups
Brinjal - 3
Tomato - 3
Turmeric - 1/4 spoon
Red Chilli - 2
Onion - 1
Mustard - 1 spoon
Curry Leaves - 15 leaves
Salt - As required

Method:
First, In a pressure cooker, Add Ridge Guard, Tomato, Brinjal.
Add, Salt, Turmeric, Red Chilli and Onion with 1 cup of water and pressure
cook for 4 whistles and sim cook for 1 whistle and keep aside.
After the heat reduced, Open the cooker, Churn vegetables with Dhall Churner.
In a pan, Add Oil, Mustard, Curry leaves and Churned Vegetables content into it.
Stir well, Add some water and Boil for 5 more minutes.
Serve and enjoy. :)
