Bitter Guard Fry (Poriyal)


Type - South Indian
Preparation Time - 5 mins
Cooking Time - 10 Mins
Serves for - 2 Persons
Served with - Rice

Ingredients:
Bitter Guard (Pavarkai) – 2
Turmeric Powder - 1/4 spoon
Mustard Seeds (Kaduku) – 1 spoon
Oil – 3 spoon
Saunf - 1/2 spoon
Red Chilli - 1
Coriander Powder - 1/2 spoon
Curry leafs - 10 leafs
Onion - 1
Jaggery - 1/2 spoon
Asafoetida - Little bit
Salt to taste

Method:
In a pan, Add cutted Bitter Guard and Turmeric powder with water and boil for 15 mins.
Once Boiled, Filter the water and keep aside.
In a blender, Add Saunf, Red Chilli, Coriander Powder, Salt and grind well.
Heat oil in a kadai and Add mustard seeds, Curry leaves, Asafoetida.
Add the onion and fry until it gets into golden brown.
Add the boiled bitter guard into the pan.
Now add the grinded powder and stir well into the onion.
Finally add Jaggery and mix well.
Fry them in the oil for 10 Mins, until it gets nicely cooked.

Serve and Enjoy. :)
