Brinjal Tamrind Gravy


Ingredients:
For Grinding (Sambar Masala):
Dry Coriander - 2 spoons
Coconut - 1/4 cup
Red Chilli - 2
Jeera - 1/2 spoon
Pepper - 1/4 spoon

For frying:
Oil - as required
Mustard (kadugu) - 1 spoon
Curry leaves - 5 leafs
Onion - 1
tomoto - 1
Brinjal - 4
Turmeric powder (Manjal thool) - 1/2 spoon
Chilli Powder (Milagai thool)  - 1 spoon
Coriandar powder (Dhaniya thool) - 1/2 spoon
Kulambu Masala thool - 1 spoon
Salt - as required
Tamrind (Puli) - 1 lemon size
Water - 1 cup

Method:
In a blender, Grind the Ingrdeients with water and keep aside.




Take kadai, Add oil, Brinjal and fry well. Keep aside.



Now, In the oil, Add mustard, curry leaves, onion, tomoto, Brinjal and fry well.



Add all spice powder one by one and saute for 5 mins.
Add turmeric, salt and Tamrind paste.



Add coconut mixture and water and cook for 3 mins.




Serve and enjoy. :)
