Ingredients:
All Purpose Flour (Maida) – 2 cups
Butter – 250 grams
Eggs – 5
Sugar – 1 cup
Baking Soda – 1/2 spoon
Baking Powder – 1 spoon
Dry Ginger powder (Chukku podi) – 1 spoon
Cinnamon powder (Pattai Podi) – 1 spoon
Cloves powder (Krambu podi) – 1/2 spoon
Cardamom powder (Yelakai podi) – 1 spoon
Dates – 1/2 cup
Tutti Frutti - 1 cup
Nuts – 1 cup chopped finely (cashew, walnuts, almonds, pista)
Vanilla Essence – 2 spoon
Salt – 1/2 spoon
For Caramel:
Sugar – 1/2 cup
Water – 1/4 cup
Method:
First, Preheat oven to 180 degree C.
In a bowl, Add the dry fruits and sprinkle with some flour.
In a sauce pan, Add sugar and heat it on low heat. Keep heating until sugar dissolves it gets dark in colour. Now keep aside.
In a bowl, Add flour, Baking powder, Baking soda, Salt, Spice powders and keep aside.
In a bowl, Add butter, Sugar, Vanilla and beat till it is creamy.
Add the eggs one by one and beat until it is creamy.
Now add the flour mix and beat nicely.
Add the dry fruits and mix.
In a pan, Coat with butter and sieve with flour.
Pour the mixture and bake for 45 mins. Check if it is cooked, Remove it and let it cool.
Cut into pieces.
Serve and enjoy.
