Spicy Coconut Egg Burji


Ingredients:
Eggs – 3
Oil – 1 tsp
Mustard Seeds (Kaduku) – 1 Spoon
Urad dal (Ulundu Paruppu) – 1 Spoon
Onion – 1
Green Chilli – 1
Salt - As Required

For Grinding:
Coconut – 1/4 cup
Shallots – 2
Dry Red Chilli – 2
Garlic – 1
Cumin Seeds (Jeerakam) – 1 spoon

Method:
In a blender, Take the grinding ingredients and blend into a mixture.


In a kadai, Add oil, Mustard, Urad dal, onions and green chilli and stir them.



Add the salt and eggs and stir nicely.

Once it is cooked, Add the grinded coconut masala and stir well.

Cook for 2 mins and switch off the stove.


Serve and enjoy.
