Potato Brinjal Fry


Ingredients:
Potato (Urulai Kilangu) – 2
Brinjal (Kathirikkai) – 2
Oil – 2 spoon
Curry leafs - 10 leafs
Kadalai Paruppu - 1 spoon
Onion - 1
Chilli powder (Milagai thool) – 1 spoon
Shredded Coconut - 1/4 cup
Salt to taste

Method:

 Heat oil in a kadai and add mustard seeds, Curry leaves and Kadalai Parupu.

Add the onion and fry until it gets into golden brown.
Now add the salt and chilli powder and stir well into the onion.

Add the Potato, Brinjal and fry them in the oil for 7-10 Mins, until it gets nicely cooked.



Finally, sprinkle the coconut and stir.



Serve and Enjoy. :)
