Cashew Vegetable Kurma


Ingredients:
Carrot - 1
Beans - 5
Green Peas - 1/4 cup
Potato - 1
Cauliflower - 1 cup
Oil – 2 spoon
Cumin Seeds (Jeerakam) – 1 spoon
Brinji leaf - 1
Star Anise (Annasi Poo) - 1
Cardamom (Yelakkai) - 1
Cinnamon (Pattai) - 1
Onion - 2
Ginger garlic paste - 1 spoon
Tomato - 1
Chilli Powder – 2 spoon
Turmeric Powder – 1 spoon
Garam Masala Powder – 1 spoon
Coriander leaves - As required
Salt - As required
Oil - 2 spoons

For Masala:
Cashews – 10
Coconut - 1/2 cup
Roasted gram (Pottu kadalai) - 1/2 cup

Method:

                                  
In a pressure cooker, Add carrot, Beans, Greens peas, Potato, Cauliflower, Cook for 3 whistles and set aside.

In a blender, Add cashews, Coconut, Roasted gram and water Grind this to a smooth paste.



Now in a pan, Heat oil, add cumin seeds, Star Anise, Brinji leaf, Clove, Cardamom, Cinnamon and sizzle it.


Add the salt and Onion and fry until it is golden.


Add the ginger garlic paste, Tomato and masala, Turmeric, Red chilli powder and fry until it is mushy.



Add the coconut puree with 2 cups of water and cooked veggies and mix well. Simmer for 8 to 10 mins.






Finally garnish coriander leaves.
Serve and enjoy. :)
