Instant Sambar (South Indian)


Type - South Indian
Preparation Time - 5 mins
Cooking Time - 10 Mins
Serves - 3 persons
Served with - Idli / Dosa / Rice

Ingredients:
Toor Dhall (Thuvaram paruppu) – 1 cup
Tomato – 1 large cubed
Turmeric powder – 1/2 spoon

For Frying:
Oil – 1 tblspn
Curry Leaves - 10 leafs
Mustard Seeds (Kaduku) – 1 spoon
Small Onion – 10
Green Chilli – 2
Chilli Powder – 1 spoon
Sambar Powder – 2 spoon
Tamarind Pulp – 2 spoon
Asafoetida (Perungaya Podi) – 1/2 spoon
Salt - As required
Jaggery / Sugar – 1 spoon
Water as needed
Coriander Leaves a small handful finely chopped

Method:
Wash toor dal in a pressure cooker, Add turmeric and tomato and cook for 3 whistle.
Heat oil in Kadai, Add Mustard Seeds, Curry leaves, Onion, Chilli.
Fry the onion and chilli until it is cooked.
Add in Sambar Powder, Chilli Powder, Salt and fry
Add the cooked dal with the water, Tamarind pulp.
Add the Asafoetida and Jaggery and cook for 10 mins.
Finally, Add in coriander leaves and stir.
Serve and enjoy with Idli Dosa / Rice
