Ingredients:
Ghee - 1/2 cup
Basmati Rice – 2 cups
Coconut Milk - 2 cups
Green Chilli - 5
Onion - 2
Cashew Nuts - 10
Garlic Paste - 1 spoon
Cardamom (Yelakkai) - 2
Cinnamon (Pattai) - 1/2 inch
Clove (Kirambu) - 3
Pandan Leaf (Birinji Elai) - 1/2
Star Anise (Annasi Poo) - 1
Salt to taste
Method:
First, In a bowl add Basmati rice with water and soak for 30 mins.
In a Pan, Add Ghee, Cardamom, Cinnamon, Clove, Pandan Leaf, Star Anise and stir well.
Add chopped onion and Stir well.
Add Salt, Garlic Paste, Coconut Milk and stir well.
Now, Add Basmati Rice and ghee and stir well.
Pressure cook for 1 whistle in high flame and 2 whistles in low flame.
Open the cooker and check the rice boiled well.
Mix the rice slowly.
Serve and Enjoy with Non-Veg Gravies / Veg Gravies. :)
