
Type - South Indian - Coimbatore Special
Preparation Time - 5 mins
Cooking Time - 15 Mins
Serves for - 2 - 3 Persons
Ingredients:
Cabbage - 1 cup
Mushroom (I used leaf mushroom) - 1 cup
Ginger Paste - 1/2 spoon
Garlic Paste - 1/2 spoon
Red chilli powder - 1 spoon
Salt - As required
All Purpose Flour (Maida) - 1/2 cup
Corn Flour - 1/4 cup
Oil - 1 spoon
Water - As required
For Frying:
Oil - As required
For Kaalan Masala Kulambu:
Tomato - 2
Ginger paste - 1/2 spoon
Garlic Paste - 1/2 spoon
Green Chilli - 1
Cloves (Kirambu) - 1
Cardamom (Yelakkai) - 1
Cinnamon (Pattai) - 1/2 inch
Coriander Seeds - 1 spoon
Fennel Seeds (Saunf / Sombu) - 1/2 spoon
Cumin Seeds (Jeerakam) - 1/2 spoon
Turmeric powder - 1/4 spoon
For Kalan Fry:
Oil - 1 spoon
Curry Leaves
Onion - 1
Food Color (Red) - 1 pinch
Corn Flour - 1 spoon
Coriander Leaves - 2 spoons
Method:
First, In a bowl, Add Chopped Cabbage, Mushroom, Ginger paste, Garlic paste, Red Chilli Powder, Garam Masala, All purpose flour, Corn Flour, Oil and mix well.
Add little water and form like dough.
In a pan, Add oil for frying, Drop dough as small balls and deep fry them.
Drain the oil and keep aside of fried balls.
For Masala Kulmabu, In a pan, Add Cloves, Cardamom, Cinnamom, Coriander seeds, Fennel Seeds, Cumin Seeds and roast them for 2 mins.
Move the roasted mix into blender and add Tomato, Ginger Paste, Garlic Paste, Green Chilli, Turmeric powder and grind as puree.
Now, In a pan, Add oil, Curry Leaves, Chopped Onion and fry well.
In a bowl, Add Corn flour with 2 spoons of water and mix well.
Pour the tomato puree, water and corn flour mix into pan.
Add food colour and fried balls into the pan, Stir continuously until all water is absorbed.
Finally, sprinkle chopped onion and coriander leaves.
Serve and enjoy. :)
