Wheat Halwa / Godumai alwa




Hi All,
This is one of the favourite recipe for a long time. Happy to share the sweetest recipe.

Type - South Indian
Wheat Soak Time : 6 to 7 hours

Preparation Time - 5 mins
Resting Time : 3 to 4 hours
Cooking Time : 1 hour

Serves - 4 persons

Ingredients:
Wheat Ravai (Broken Wheat) – 1 cup
Sugar – 2.5 cup
Water – 4 cup
Ghee – 1.25 cup
Cashews – 1/2 cup

Method:
Soak the wheat  in water for 6 to 7 hours.
Drain and take it in a blender and grind.
Strain the extract as milk nicely.
Add water to the ravai and again extract milk.
Now set this milk aside for 3 to 4 hours.
Now remove the top watery liquid.
Add 4 cup of water to the milk and mix well.
Take 2 cup of sugar in a nonstick pan and add 1/2 cup of water to it., take 1/2 cup of sugar in a small sauce pan and add 1/4 cup water to it.
Cook the 1/2 cup sugar till it becomes dark .
Pour the dark sugar syrup in nonstick pan and mix well.
Add the wheat milk to this and mix well.
Keep stirring till it gets thick. At this point start adding ghee a spoonful at a time. Mix well.
Again keep stirring till ghee separates. It will take around 45 mins to 1 hour.
Finally Add fried cashews and mix well.
Keep aside until heat reduced and add little bit of ghee for the final touch.
Serve with family and enjoy. :)
