Ingredients:
All Purpose Flour (Maida) – 1 cups
Mangoes (I used Alphonsa Mango Breed) - 2
Oil – 1/4 cup
Vanilla Essence – 1 spoon
Water - 1/4 cup
Powdered Sugar – 1/4 cup
Baking Powder – 1/2 spoon
Baking Soda - 1/4 spoon
Food colour (Yellow) - 1 pinch
Tutty Fruity - 1/4 cup
Method:
First Sieve the flour and keep aside.
In a blender, Add the 1 - cutted Mango slices and grind well.
Take a bowl, Add Oil, Vanilla Essence, Powdered Sugar and Stir well.
Add the flour gradually with the stirred content and beat nicely with cake beater.
Dust the cake pan with Oil and flour.
Pour the flour mix in to the cake pan.
Add some Tutty Fruity on top of it.
Now comes baking part, In a Idly cooker (or) Pressure Cooker, Place salt down like a layer and heat for 5 mins. (Good to use aluminium vessels, If you are using pressure cooker, remove the inner belt and weight)
After that place the cup cakes on top of salt, close with lid and cook for 10-15 mins.
Then Insert a Knife into the cake, Whether the cake is cooked or not.
Now the cake is ready.
Cool, Serve and enjoy. :)
